Grandma’s Simple Buttermilk Peach Cobbler

A delightful summer dessert straight from the Rio Linda peach orchards

This peach cobbler offers a unique twist on the classic dessert. Instead of the traditional biscuit or pie crust, the fruit is layered on top of a tender, cake-like batter. The addition of browned butter imparts a nutty, caramelized flavor, while buttermilk provides a delightful tang. Enjoy this warm or at room temperature for a delicious treat.

Ingredients:

  • 2 pounds fresh peaches, pitted and sliced (peeling optional) or 6 cups frozen peach slices
  • ½ cup packed dark brown sugar
  • 2-3 teaspoons fresh lemon juice
  • ½ cup unsalted butter
  • 1½ cups all-purpose flour
  • 1 cup granulated sugar, plus more for sprinkling
  • 1 tablespoon baking powder
  • 1 teaspoon fine sea salt
  • 1½ cups buttermilk
  • ½ to 1 teaspoon of your favorite flavoring (like nutmeg, cinnamon, or vanilla)

Instructions:

  1. Prepare the Peaches: Preheat oven to 350°F. In a cast-iron skillet or nonstick pan over medium heat, combine peaches, brown sugar, and lemon juice. Simmer until sugar melts and liquid thickens slightly (2-4 minutes). Set aside in a bowl. Add more lemon juice if needed for a brighter flavor.
  2. Brown the Butter: In the same pan, melt butter over medium heat until it turns golden brown and smells nutty (2-4 minutes). Reserve the brown butter in the pan.
  3. Make the Batter: In a mixing bowl, whisk together flour, granulated sugar, baking powder, and salt. Pour in buttermilk and flavoring. Mix just until combined.
  4. Assemble the Cobbler: Scrape the batter onto the brown butter in the pan. Scatter peach slices and their juices on top. Sprinkle with additional sugar, if desired.
  5. Bake: Bake until golden brown on top (50-60 minutes). Let cool slightly on a wire rack before serving.
